Sweet Potato Casserole

INGREDIENTS:

  • 8 sweet potatoes
  • 2 Dutch Farms eggs
  • ½ cup milk
  • ¾ cup white sugar
  • ½ cup brown sugar
  • ½ cup butter
  • ½ cup melted butter
  • ½ cup flour
  • 1 ½ cups chopped pecans
  • 1 teaspoon vanilla

DIRECTIONS:

  • Peel and boil the sweet potatoes. When soft, mash together with 2 eggs (beaten), milk, butter, vanilla and white sugar.
  • In a separate bowl, combine the brown sugar, ½ cup melted butter, pecans and flour.
  • In a casserole dish, spread mixture on top of the mashed sweet potatoes. Cover and bake at 350 degrees for 25 minutes.
