Pumpkin Blondies

Serves 12

INGREDIENTS:

  • ¾ cup brown sugar
  • ½ cup sugar
  • 1 stick unsalted Dutch Farms Butter
  • 1 ½ cups white chocolate chips
  • 1 cup pumpkin puree
  • 4 large Dutch Farms Eggs
  • 1 tablespoon vanilla
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 2 teaspoons baking powder
  • pinch of salt
  • 1 cup semi-sweet chocolate chips

DIRECTIONS:

  • Preheat the oven to 350°.
  • Add the sugars and butter to a medium size sauce pot and cook over medium heat until the butter is completely melted and mixed in with the brown sugar, and slightly bubbling.
  • Remove from the heat and mix in the white chocolate until melted and then whisk in the eggs.
  • Next, add in the vanilla, flour, baking soda, baking powder and salt and whisk until combined.
  • Fold in the semi-sweet chocolate chips until mixed in.
  • Pour the batter into a greased 13×9 casserole dish lined with parchment paper and bake at 350° for 30-35 minutes or until a slight jiggle in the center but firm to the touch.
  • Cool completely at room temperature then slice and serve.
  • Optionally serve with ice cream and caramel
