Blackberry Peach Cobbler

Serves 6

COBBLER INGREDIENTS:

  • 4 peeled, pitted and sliced peaches
  • 1 cup blackberries
  • juice and zest of 1 lemon
  • ½ stick of Dutch Farms Unsalted butter cut into chunks
  • 1 ½ cups flour
  • 1 tablespoon baking powder
  • 1 ½ cups sugar
  • 1 ½ cups whole milk

HOMEMADE CARAMEL INGREDIENTS:

  • 1 cup packed light brown sugar
  • ½ cup heavy cream
  • 2 tablespoons Dutch Farms unsalted butter

DIRECTIONS:

  • Preheat oven to 375°.
  • Cobbler: In a bowl toss together the peaches, blackberries, lemon juice, lemon zest and butter and transfer to an 8”x4” casserole dish or 10” cast iron skillet.
  • In a separate large bowl whisk together the flour, baking powder, sugar and whole milk until completely combined.
  • Pour the mixture over top of the fruit and bake at 375° for 40 to 45 minutes or until golden brown on top and firm in the center. Serve warm.
  • Caramel: While the cobbler is baking add the brown sugar, cream and butter to a small size pot and cook over low heat until smooth and melted, about 5 to 7 minutes.
  • Serve the cobbler with ice cream and caramel.
