Serves 6
COBBLER INGREDIENTS:
- 4 peeled, pitted and sliced peaches
- 1 cup blackberries
- juice and zest of 1 lemon
- ½ stick of Dutch Farms Unsalted butter cut into chunks
- 1 ½ cups flour
- 1 tablespoon baking powder
- 1 ½ cups sugar
- 1 ½ cups whole milk
HOMEMADE CARAMEL INGREDIENTS:
- 1 cup packed light brown sugar
- ½ cup heavy cream
- 2 tablespoons Dutch Farms unsalted butter
DIRECTIONS:
- Preheat oven to 375°.
- Cobbler: In a bowl toss together the peaches, blackberries, lemon juice, lemon zest and butter and transfer to an 8”x4” casserole dish or 10” cast iron skillet.
- In a separate large bowl whisk together the flour, baking powder, sugar and whole milk until completely combined.
- Pour the mixture over top of the fruit and bake at 375° for 40 to 45 minutes or until golden brown on top and firm in the center. Serve warm.
- Caramel: While the cobbler is baking add the brown sugar, cream and butter to a small size pot and cook over low heat until smooth and melted, about 5 to 7 minutes.
- Serve the cobbler with ice cream and caramel.
