DUTCH FARMS Buffalo Chicken Quinoa Bowl

 

Serves 4

INGREDIENTS:

  • 3 Chicken breasts
  • Frank’s Red Hot Buffalo Wing Sauce
  • 2 stalks of celery (large), diced
  • 2 stalks of baby bok choy, diced stems, chopped leaves
  • 1 ½ cups of shredded carrots
  • 3 scallions, sliced medium thin
  • 2 cups quinoa
  • Dutch Farms Crumbled Blue Cheese

DIRECTIONS:

  • Lightly coat the chicken in olive oil, salt and pepper in a glass baking dish. Bake the chicken in the oven for 24 minutes at 400ºF
  • Cook the quinoa (per package instructions) and set aside to cool slightly2
  • Combine the diced celery, shredded carrots, bok choy, half the scallions (bottom portion) in a large bowl
  • Dice the chicken and place in medium bowl, generously toss with Franks Red Hot Buffalo Sauce
  • Add the quinoa and chicken to the large bowl of veggies, stirring until buffalo sauce lightly coast all ingredients
  • Serve in bowls and top with Dutch Farms Crumbled Blue cheese and sliced scallions (top portion) 651
